Almond Encrusted Fillet of Sole

Ingredients

1 1/2 pounds sole fillets
1/2 teaspoons ground pepper
1 tablespoon paprika
1/3 cups milk
3 1/2 oz sliced almonds, chopped
3 tablespoons butter
4 slices fresh lime

Directions

  1. Sprinkle sole with pepper & paprika. Dip fillets in milk, then gently dredge both sides with almonds.
  2. Melt butter in skillet over med high heat.
  3. Arrange fillets in skillet, close together but not overlapping.
  4. Fry about 5-7 minutes, turning once until almonds are golden brown on both sides and fish flakes easily with fork.
  5. Serve with lime slice on each serving.
