This hearty lasagna recipe is a crowd pleaser you will never miss the meat...we replace it with soy crumbles. Even die hard carnivores won't miss the meat. The recipe is also very forgiving. Ingredients easily swapped, you can use cottage cheese or ricotta , jarred spaghetti sauce or any variation of canned tomatoes or sauce you have on hand.

Ingredients

24 ounces ricotta cheese
2 eggs
Salt
Pepper
Basil
1 lb mozarella cheese
1 bag soy crumbles (to equal one pound of meat look for meat equivalent on package)
48 ounces marinara sauce
1 tablespoon of garlic
Olive oil
One package lasagna noodles

Directions

  1. Coat pan with olive oil
  2. Sautée garlic
  3. Add soy crumblies and brown
  4. Add spaghetti sauce to browned meat
  5. Boil lasagna noodles
  6. Combine ricotta cheese, eggs, salt, pepper and basil and half of the mozarella cheese.
  7. Pour some marinara sauce in bottom of 13x9 Pyrex
  8. Layer noodles, soy mixture then cheese mixture sprinkle some reserved mozarella on top and continue process until out of ingredients.
  9. Make sure top layer is mozarella cheese
  10. Bake at 350 until brown on top, about 45 minutes
  11. Let rest fo 10 minutes and enjoy!
