This is the best noodle pudding ever. I make it and give it to my kids for breakfast before school or it is fabulous at brunch. I make these in cup cake pans and freeze and pop in microwave for kids.

Ingredients

1 package cream cheese
16 oz cottage cheese
1 stick margarine melted
1/2 cup sugar
1/2 tsp cinnamon
1 tsp. vanilla
3 eggs
8 ozs egg noodles

Directions

  1. Mix all ingredients on low speed until blended.
  2. Drain noodles and mix with above mixture.
  3. Pour into either cup cake pan or 11 X 7 pyrex
  4. Bake at 350 30-40 minutes for pyrex; 20 minutes for cup cakes.

Technically, you can eat anything if the potiorns are small enough, but assuming you want to eat potiorns that are actually going to fill your stomach, then I suggest you stay away from foods high in carbohydrates, especially sugar and anything with processed wheat flour, both of which can really wreak havoc on blood sugar.
