Given to me by a Jewish Swedish person! It's colorful and tasty. I have made it with the pickled herring in wine sauce (jar). It's more of a main course salad. The combinations are well suited with each other

Ingredients
Two herring fillets or equivalent of herring from a jar
4 to 5 small cold boiled potatoes
5 pickled beets ( from a jar )
1/2 kosher dill pickle
1 to 2 red apples
1 to 2 Tbs finely chopped white or yellow onion
4 to 6 tbs beet juice ( from the pickled beets in a jar )
White pepper to taste
Optional Garnish: sliced hard boiled eggs
Directions
- Cut herrings, potatoes, beets, pickles and apples separately into small cubes
- Mix all together gently.
- Add the beet juice and white pepper and stir gently to mix
- Let stand in a cool place or chill before serving
- Note: also can be put in a bowl and unmolded onto a platter and garnished with the hard boiled egg slices
