Ingredients

1 lb. butternut squash, peeled and shredded
2 medium baking potatoes, peeled and shredded
1/4 cup chopped fresh cilantro
2 eggs, beaten
1/2 cup matzo meal
1/2 tsp. lemon juice
1 tsp. ground ginger
1 tsp. salt
pepper to taste
3-4 tbs. peanut or olive oil

Directions

  1. In a large bowl, combine squash, potatoes, and cilantro.
  2. Add beaten eggs, matzo meal, lemon, ginger, salt and pepper. Mix well.
  3. Heat 1 tbs. oil on a large non- stick skillet over medium heat.
  4. Place small amount of latke batter in skillet and cook about 5-7 minutes per side, until brown and firm.
  5. Keep warm in a low over while using the rest of the mixture. Add more oil to skillet as needed.
