A great way to enjoy cauliflower. Cook more or less depending on how soft you prefer the cauliflower.

Ingredients

1 Cauliflower
2 Onions, chopped
6 tbl. olive oil (or less)
1/2 tsp. Mustard seeds
1 tsp. Ginger, ground
1 tsp. Salt
1/2 tsp. Turmeric
1/2 tsp. Cumin
2 tbl. Parsley, chopped
1 can diced tomatoes
Sugar

Directions

  1. Saute onions in oil until soft, then add the mustard seeds, ginger, salt and turmeric.
  2. Cook for about 3 minutes, stirring.
  3. Cut up cauliflower and add it to spice mixture, making sure it is covered thoroughly.
  4. Add diced tomatoes, stir into mix along with the with cumin and parsley.
  5. Add sugar to taste.
  6. Cover and cook over low heat for 15 minutes. Stir occasionally to prevent boiling.
