Thanksgiving Sweet Potato Kugel

Sweet potatoes are a Thanksgiving day staple and you can prepare them with a Jewish flare that your guests will enjoy.

Ingredients

4 cups challah bread, cut in cubes
4 medium sweet potatoes
1/4 cup brown sugar
3 tbl. parve margarine
4 eggs, beaten
2 tsp. vanilla extract
1/4 tsp. ground cinnamon

Directions

  1. Peel and cut sweet potatoes into small chunks. Boil the potatoes for about 20 minutes, until soft enough to mach with a fork.
  2. Drain and mash.
  3. Add challah cubes, brown sugar, margarine, eggs, vanilla and cinnamon and place into a greased baking dish.
  4. Bake at 350 degrees (F) for 45 minutes.

Hi Amanda,Put the ingredients into a bowl in the same order as the reipce and let them stand at room temperature for about 35 minutes.Mix them together into a smooth dough and knead the dough for a minimum of ten minutes. It should become smooth and elastic.Put the dough into a bowl and cover it with a warm, wet, teatowel and let it rise in a warm place for about one hour or until it has doubled inside, then just follow the reipce above. It's how we used to make the Challah pre-breadmaker, I must admit the long kneading got to me!I hope this all makes sense, please let me know if anything is unclear!Miri
