Trout with Onions and Tomatoes

I'm not entirely sure where this recipe comes from. I had it on a scrap of paper in my pocket after making it one day. I've since made it several times but the scrap of paper has moved from my pocket, to a table, to my desk. I think it's best to keep it in JRT.

Ingredients

3 trout fillets
2 tbl. parsley, chopped
2 tbl. lemon juice
1 1/2 tsp. seasoned salt
6 tbl. olive oil
1 large onion, sliced thin
2 cloves garlic, sliced
1 large tomato, sliced thin
4 tsp. white wine

Directions

  1. Arrange the fish in a baking dish (lightly oiled or sprayed)
  2. Sprinkle with parsley, lemon juice and salt
  3. Heat oil in a skillet and fry onions and garlic
  4. Cover fish with onion/garlic mixture, and then tomatoes
  5. Sprinkle wine over the top and bake at 350 degrees (F) for 30 minutes or until fish is flaky
