Salmon Patties

Easy to make and a great way to use up old bread!

Serves: 8-12 (depends on size)

Ingredients

1 15 oz. can salmon
2 slices of stale bread
1 medium onion, finely chopped
1/2 cup parsley, finely chopped
salt and pepper to taste
2 eggs
Oil for frying

Directions

  1. Drain salmon and set aside liquid.
  2. Soak stale bread in liquid until fully absorbed.
  3. Mix salmon with bread, chopped onion, and parsley and add salt and pepper to your taste.
  4. Lightly beat the eggs and add to salmon mixture.
  5. Shape into patties and fry in hot oil until golden brown on both sides.
