Easy to make and a great way to use up old bread!

Ingredients
1 15 oz. can salmon
2 slices of stale bread
1 medium onion, finely chopped
1/2 cup parsley, finely chopped
salt and pepper to taste
2 eggs
Oil for frying
Directions
- Drain salmon and set aside liquid.
- Soak stale bread in liquid until fully absorbed.
- Mix salmon with bread, chopped onion, and parsley and add salt and pepper to your taste.
- Lightly beat the eggs and add to salmon mixture.
- Shape into patties and fry in hot oil until golden brown on both sides.
