Salad with Fruit and Curry Dressing

This colorful salad is great for a light lunch - it's full of flavor and the almonds provide a satisfying crunch. Use romaine lettuce if you prefer or don't have red lettuce handy. You can also use other fruits in season.

Ingredients
1 head red lettuce
1 cup spinach
11 oz. mandarin oranges
1 cup seedless red grapes, halved
1/2 cup slivered almonds, toasted
1 avocado, peeled and sliced
For the dressing:
1.2 cup oil
1 clove garlic, minced
2 tbs. packed brown sugar
2 tbs. freeze dried chives, minced
1 tbs. curry powder
1 tsp soy sauce
Directions
- Mix salad ingredients (except for almonds and avocado) and refrigerate until ready to serve.
- Mix salad dressing ingredients.
- Toss salad with dressing and add almonds slivers and avocado slices to serve.
