Candied Orange Carrots

This is quite simple but everyone loves these. The orange marmalade is the special ingredient

Ingredients

2 pounds of baby carrots
2/3 cup orange marmalade
2 Tablespoon brown sugar
2 Tablespoon butter or margarine
3 Tablespoon orange juice
Optional: 1/2 cup coarsely chopped toasted pecans

Directions

  1. Steam or cook carrots until tender.
  2. Drain.
  3. Transfer carrots to serving bowl
  4. Add 2/3 cup orange marmalade, stirring gently until orange marmalade melts
  5. Combine brown sugar,butter in a microwaveable dish and cook until brown sugar melts.
  6. Stir in pecans and pour over carrot mixture, tossing gently to coat
  7. Serve with a slotted spoon
