I have created a recipe that tastes sweet and delicious like it is supposed to, but it is much more healthy and suitable for diabetics. I have greatly reduced the cholesterol and fat, as well as replaced the sugar with a healthy substitute. Instead of regular sour cream and cottage cheese, I used Tofutti milk free sour cream and organic 1 % low fat cottage cheese. 1 cup Toffuti milk free sour cream
5 1/2 teaspoons Stevia sugar substitute
3 large eggs
1/2 cup dark raisins
2 cups of diced apples
1 and a half cup of pecan halves
1/2 teaspoon ground cinnamon
Directions
- Measure out all ingredients and put into mixing bowl.
- Boil noodles and add to mixing bowl of ingredients.
- Mix thoroughly all ingredients together.
- Pour ingredients into 9 by 13 inch pyrex pan and preheat oven to 350 degrees.
- Bake until noodles brown on top, typically takes around 45 minutes depending on oven.
