White Bean & Turkey Chili

Ingredients
1 cup onions, chopped
1 clove garlic, minced
1 tablespoon vegetable oil
1 pound ground turkey
1 can stewed tomatoes (14 1/2 ounce)
1 cup chicken broth
1/2 cups dijon mustard
1 tablespoon chili powder
1/8 teaspoons ground red pepper
1 can cannellini beans (15 ounce), drained and rinsed
1 can corn (8 ounce), drained
Cilantro, for topping
Directions
- Sauté onions and garlic in oil in a 3-quart saucepan over medium-high heat,
- Add turkey and brown cook. Drain.
- Stir in tomatoes, chicken broth, mustard, chili powder and pepper.
- Bring chili to a boil then reduce heat and simmer for 10 minutes.
- Stir in beans and and corn and cook for an additional 5 minutes.
- Top with cilantro and serve.
