My Mom's Chicken Soup

Ingredients

Whole Chicken
2-3 parsnips
2-3 celery stalks
1 large onion
2-3 Carrots (or a large bag of baby carrots)
1 large whole tomato (this is an important ingredient to the flavor of the soup)
Fresh dill
Pepper as desired
Cook Separately Follow the directions on the Package for:
1-2 packages of Greenfield Noodles or
3-4 cups of white rice

Directions

  1. Cut-up chicken into quarters or smaller
  2. Boil water in a large soup pot
  3. Add the chicken and the onion
  4. Cook the the chicken and onion for one hour
  5. Add all remaining ingredients (you may want to take out some of the chicken pieces)
  6. Cook on low heat with the top on for approximately 3-4 more hours (there should only be approx 3-4 pieces of chicken at this point in the pot)
  7. Let cool with the lid off
  8. Strain the soup saving the carrots for the soup
