This soup is a meal in itself. Full of vegetables and beef it's low in fat and full of nutrition. Eat with a good crusty bread and what else do you need?

1/2 lb. lean ground beef
3 tbl. oil
1 large onion, chopped
2 cloves garlic, minced
6 cups cut up vegetables (use your favorites - e.g. carrots, corn, peas, beans celery, etc.)
2 quarts beef or chicken broth
1 16 oz. can kidney beans, drained
1/2 tsp. dry basil
1/2 tsp. oregano
1/2 tsp. rosemary leaves
1 8 oz. can tomato sauce
2 large tomatoes, seeded and chopped
2/3 cup elbow macaroni
2 cups shredded cabbage (substitute spinach or swiss chard)
salt and pepper to taste


  1. In a large pot, heat oil over medium. Add onions, garlic and vegetables and saute for 4-5 minutes
  2. Add ground beef and continue sautéing until meat is browned until onions are translucent
  3. Drain excess fat, add broth, kidney beans and seasonings and simmer covered for 30 minutes.
  4. Add tomato sauce, tomatoes and macaroni and continue simmering, covered, for 20 minutes.
  5. Add the cabbage (or substitutes) and continue cooking about 5 minutes.
  6. Season with salt and pepper and enjoy!
