This soup is a meal in itself. Full of vegetables and beef it's low in fat and full of nutrition. Eat with a good crusty bread and what else do you need?

Ingredients
1/2 lb. lean ground beef
3 tbl. oil
1 large onion, chopped
2 cloves garlic, minced
6 cups cut up vegetables (use your favorites - e.g. carrots, corn, peas, beans celery, etc.)
2 quarts beef or chicken broth
1 16 oz. can kidney beans, drained
1/2 tsp. dry basil
1/2 tsp. oregano
1/2 tsp. rosemary leaves
1 8 oz. can tomato sauce
2 large tomatoes, seeded and chopped
2/3 cup elbow macaroni
2 cups shredded cabbage (substitute spinach or swiss chard)
salt and pepper to taste
Directions
- In a large pot, heat oil over medium. Add onions, garlic and vegetables and saute for 4-5 minutes
- Add ground beef and continue sautéing until meat is browned until onions are translucent
- Drain excess fat, add broth, kidney beans and seasonings and simmer covered for 30 minutes.
- Add tomato sauce, tomatoes and macaroni and continue simmering, covered, for 20 minutes.
- Add the cabbage (or substitutes) and continue cooking about 5 minutes.
- Season with salt and pepper and enjoy!
