Baked Fish with Lemon

This baked fish is very light and easy to make. You can spice it up per your preference with garlic or ground red pepper.

Ingredients
1 tbsp. vegetable oil
Lemon pepper, to taste
1 tbsp. lemon juice
1 1/2 pounds fish fillets (sole works well)
2 tbsp. chopped parsley
1 lemon, cut into 6 wedges
Salt, to taste
Directions
- Combine vegetable oil, lemon juice and lemon pepper, then coat mixture on bottom of baking dish.
- Dredge fillets in baking dish to cover both sides in lemon/oil mixture
- Place fillets in dish then cover with chopped parsley.
- Broil fillets for 4 minutes per side until edges begin to brown.
- Season with salt and a dash of lemon pepper and serve with a lemon wedge.
