Baked Fish with Lemon

This baked fish is very light and easy to make. You can spice it up per your preference with garlic or ground red pepper.

Ingredients

1 tbsp. vegetable oil
Lemon pepper, to taste
1 tbsp. lemon juice
1 1/2 pounds fish fillets (sole works well)
2 tbsp. chopped parsley
1 lemon, cut into 6 wedges
Salt, to taste

Directions

  1. Combine vegetable oil, lemon juice and lemon pepper, then coat mixture on bottom of baking dish.
  2. Dredge fillets in baking dish to cover both sides in lemon/oil mixture
  3. Place fillets in dish then cover with chopped parsley.
  4. Broil fillets for 4 minutes per side until edges begin to brown.
  5. Season with salt and a dash of lemon pepper and serve with a lemon wedge.
