Mushroom and Cottage Cheese Quiche

Recipe calls for butter but you can replace with oil if you prefer.

Ingredients
1/2 lb. mushrooms (use your favorite)
5 tbl. butter
1/2 cup bread crumbs
1 bunch scallions, chopped
3 eggs, lightly beaten
2 cups shredded cheese (Jack, cheddar, etc.)
1 cup cottage cheese
2 tsp. fresh dill, chopped
Salt and pepper, to taste
Directions
- Saute mushrooms in 1 tablespoon butter until soft, about 5 minutes.
- Mix in bread crumbs then remove to a lightly buttered 9 inch pie pan.
- Saute scallions (green onions) and mix with eggs, cheeses and dill.
- Season with salt and pepper, pour into pie pan.
- Bake at 350 F for 35 minutes, until browned on top.
- Let stand for 15 minutes before serving.
