Applesauce Kugel

Nice flavor. Use margarine to make it parve.

Ingredients

6 eggs, separated
11 oz. butter (or margarine)
1 cup sugar
1 tsp. vanilla
16 oz package medium egg noodles
16 oz jar applesauce

Topping:
2 cups crushed cornflakes
1 cup brown sugar
Cinnamon to taste

Directions

  1. Boil a pot of water and cook noodles 6-7 minutes (not quite done).
  2. While noodles cook, beat egg whites until they form peaks. Set aside.
  3. Melt the butter in a 9"x13" pan.
  4. In a separate bowl, beat egg yolks and sugar, then add vanilla.
  5. Fold in cooked and drained noodles and applesauce into the egg mixture.
  6. Fold in egg whites then pour mixture into baking pan, mixing lightly with the butter.
  7. Combine the topping ingredients and sprinkle over noodles, pat down slightly.
  8. Bake for 1 hour at 500 degrees (F).
