These potato pancakes are a favorite on Hanukkah. To make them suitable for Passover, use matza meal in place of flour.

Ingredients

3-4 medium potatoes, grated
2-3 tbs. of flour (or Matzo meal on Passover)
1 egg
cooking oil
salt and pepper
1 small onion, grated
apple sauce (optional)
sour cream (optional)

Directions

  1. Mix potatoes, egg, flour, onion, salt and pepper.
  2. Form into patties and fry until brown on both sides (about 2 minutes for each side). Serve with apple sauce or sour cream.
