5 cups shredded green cabbage
12 cups water
1 carrot, sliced
1 zucchini, sliced
1 large tomato, coarsely diced
1/2 green pepper, sliced in rings
1 onion, sliced
2 cloves garlic, finely chopped
2 tbs tomato paste
1 tbs frozen apple juice concentrate
Juice of 1/2 lemon
1/4 tsp basil
1/4 tsp oregano
Dash pepper


  1. Place all ingredients in a large pot along with 8 cups of water.
  2. Bring to a boil, then reduce heat, cover and simmer for 30 minutes. Add 4 more cups of water, cover and simmer an additional 20 minutes.
