Garlic Chicken In Wine Sauce

Easy to make Israeli chicken recipe has loads of garlic and is healthy. This recipe provides a great base to add your own variations.

Ingredients
2 lbs. chicken breasts, skinless boneless
4 tbl. olive oil
3 medium tomatoes, sliced
8 cloves whole garlic
1/2 cup cognac
2 1/2 cups dry white wine
2 celery stalks, cut in 2 inch sections
2 fennel stalks, cut in 2 inch sections
1/3 cup green olives
1 tsp. salt
1/2 tsp. black pepper
4 bay leaves
1/4 tsp. dry thyme
1 pinch ground ginger
Directions
- Saute chicken in oil until lightly browned.
- Reduce heat and add tomatoes, half of the garlic and stir in the cognac and wine. Add celery, fennel, olives, and remaining garlic cloves. Cook 5 minutes.
- Add remaining ingredients and simmer for 30 minutes.
