Stuffed Green Peppers

I loved eating these as a kid -- it seemed so interesting to eat a meal out of a pepper. Below is the basic recipe -- add whatever spices you favor to the mix to make it your own!

Ingredients

4 green peppers
1 lb ground beef
1/2 cup cooked rice
1 medium onion, finely chopped
1 14 oz. can tomato sauce
salt, to taste

Directions

  1. Brown the ground beef in a frying pan and add onions and continue browning
  2. Add the cooked rice and tomato sauce and cook over medium heat until just about to boil
  3. Add salt to taste
  4. While the mixture is heating, cut the tops off the peppers (save for later), remove the seeds, and rinse in cold water
  5. Spoon the mixture into the peppers, replace the pepper tops and bake at 350 degrees (F) for about 30 minutes
