Walnut Chicken Stir Fry

Ingredients

4 skinless boneless chicken breasts
3 tablespoons cornstarch
1 tablespoon vegetable oil
3 cloves garlic; minced
5 tablespoons Soy sauce
1 cup crushed walnuts
1 1/2 tablespoons cooking sherry
1 teaspoon sugar
1/4 cups water
6 green onions, cut into 1 inch pieces
1/8 teaspoon crushed red pepper

Directions

  1. Cut chicken into 1 inch cubes and lightly toss with cornstarch.
  2. Heat oil in skillet or wok and saute walnuts until lightly toasted. Remove and set aside.
  3. Stir-fry chicken and garlic until lightly browned.
  4. Add soy sauce, sherry, sugar and water.
  5. Cover and cook 3 minutes or until chicken is cooked through.
  6. Add green onions, crushed red pepper and walnuts and cook uncovered about 2 minutes.
