North African Baked Cabbage

This simple to prepare parve side dish of cabbage and tomatoes was popular among Moroccan Jews.

Ingredients

1 medium head of cabbage
3 large tomatoes, peeled and chopped
1/2 tsp. garlic powder
1 small onion, chopped
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. cumin

Directions

  1. Quarter the cabbage head and boil for 5 minutes to soften. Drain and remove to baking dish.
  2. Combine remaining ingredients then gently pour over the cabbage sections.
  3. Bake for 20 minutes in 350 degree (F) oven.
