Lentils and Rice (Megadarra)

This popular dish is also made with cracked wheat in place of rice. It is very filling and makes a great entree or side dish.

Ingredients
1 cup brown lentils
1 cup basmati rice
2 medium onions, sliced thin
4 tbl. olive oil
2.5 - 3 cups water
1 tsp. cumin
1/2 tsp. allspice
2 garlic cloves, crushed
salt and pepper to taste (I like at least a tsp of salt)
Directions
- In a saute pan, gently cook the lentils in 2 tbl. olive oil
- Add water and bring to a boil, then reduce heat and simmer for 15 minutes
- Mix in rice, cumin and allspice, return to boil then reduce heat and simmer for 20 minutes
- When water has been absorbed, add salt and pepper to taste
- While lentils and rice are simmering, saute the onions in the remaining olive oil. The onions should be sauteed until they are a deep golden brown.
- Add garlic and saute for a few minutes more
- Add onions to rice and lentils, reserving some to put on top

Very nice and aromatic. Doubled the spices and added a little crusher red chilies. Yum!! The proportions of rice/lentils to water seemed off. Had to add 1 additional cup in order to cook the rice.
