Sephardic Fish Patties in Tomato Sauce

Ingredients

2 pounds fresh carp. ground
1 bunch parsley, finely chopped
1 onion, finely chopped
Salt and pepper to taste
1 egg
1/2 cup matzah meal or bread crumbs

Sauce:
1 can crushed tomatoes
1 can tomato paste
1 tsp. olive oil
1 tsp. basil
1 tsp. oregano

Directions

  1. Mix all ingredients together.
  2. Form into hamburger-sized patties. Fry in skillet with approximately 1/4 cup oil until golden brown.
  3. To make sauce: Cook and stir together ingredients on low heat until heated.
  4. Serve hot with sauce poured over the fish.
