Barley gives this kugel a unique flavor.

Ingredients
3 cups Water
3/4 cups medium barley
8 ounces plain low-fat yogurt
1 cup 2% low-fat cottage cheese
3/4 cups egg whites
1/4 cups light corn syrup
1 teaspoon vanilla
1 teaspoon ground cinnamon
1 1/2 cups apples, finely chopped
1 cup raisins
2 tablespoons sugar
Directions
- Cook barley according to package directions and set aside.
- Heat oven to 350 F.
- In large bowl, combine yogurt, cottage cheese, egg yolks, corn syrup, vanilla and 1/2 teaspoon cinnamon; mix well.
- Stir in cooked barley, apples and raisins; mix well.
- Spread into lightly greased (or sprayed) 11x7 glass baking dish.
- Sprinkle evenly with combined sugar and remaining 1/2 teaspoon cinnamon.
- Bake at 350 degrees (F) for 35 minutes (kugel is done when edges are set and knife inserted in center comes out clean).
- Let stand 30 minutes before serving.
