Honey Cake (Parve)

Ingredients

2 cups flour
1 cup sugar
3 eggs
1/2 cup honey
1/2 tsp soda
3 tsp baking powder
1/2 cup vegetable oil
1/2 tsp nutmeg
1 tsp cinnamon
1/4 tsp ginger
1 tsp cocoa
1 cup orange juice
1/2 cup chopped raisins
1 cup chopped walnuts or almonds

Directions

  1. Cream oil and sugar together.
  2. Beat in eggs at medium speed. Make sure to add the eggs to the cream mixture one at a time. Continue beating until mixture is light and airy.
  3. Next add the honey to the mixture – add it slowly while you continue to beat (still at medium speed). Set aside.
  4. Set aside 1/4 cup of flour and sift the remaining flour together with the soda, baking powder, nutmeg, ginger, cinnamon and cocoa.
  5. Next prepare the cake batter by adding the flour mixture to the egg/honey mixture, along with the orange juice and blend together until smooth.
  6. Add chopped raisins and walnuts to 1/4 cup flour previously set aide and add to batter, mixing well.
  7. Spread into two bread pans and bake at 350 degrees (F) for 55 minutes.
