8 eggs, separated
1 cup sugar
1/2 cup almonds, chopped finely
1/8 cup orange juice
grated orange rind
1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. allspice
1 cup matza meal


  1. Lightly beat egg yolks with sugar, add almonds, orange juice, orange rind, spices and matza meal.
  2. Beat egg whites until firm and fold into the egg yolk mixture.
  3. Bake for 30 minutes at 325 degrees (F) in un-greased tube pan with wax paper on the bottom.
  4. Let cool completely in pan upside down.
