Ingredients

6 large potatoes, peeled and cubed in 1 inch pieces
4 carrots, peeled and cut in 1 inch pieces
1 large onion, peeled and halved
2 eggs
4 tbl. chicken fat, melted (alt. use vegetable oil)
1 1/2 tsp. salt
1 tsp. sugar
4 tbl. matza meal
1 tbl. potato starch
1/2 tsp. black pepper
2 tbl. parsley, chopped
Paprika

Directions

  1. Break one egg into blender and blend at high speed.
  2. Add half of the onion, 1/2 of the potatoes, 1/2 of the carrots and blend until consistency is smooth. Set aside mixture.
  3. Repeat with other egg and remainder of onion,
  4. potatoes and carrots.
  5. Combine into one mixture and add chicken fat (or oil), salt, sugar, matza meal, potato starch, black pepper and parsley.
  6. Pour into greased 8x8 inch pan and sprinkle with paprika.
  7. Bake for 1 hour at 375 degrees (F) or until browned.
