Make this soup parve by using vegetable stock.

Ingredients
4-5 large carrots
1 small potato, peeled and diced
1/2 onion
3 tbs. ground coriander
2 tbl. olive oil
Salt and pepper, to taste
Chicken bouillon or stock to cover
Directions
- Chop onion coarsely and saute until translucent
- Add remaining ingredients, including stock, and bring to a boil, then lower heat and simmer for 20 minutes
- Puree cooked soup in a blender until creamy, adjust thickness with additional bouillon, if required.
- Serve hot, garnished with parsley.
