Spiced Spinach

Turn this into a dairy dish by serving with plain yogurt for a cool flavor.

Ingredients
1 package fresh spinach
2 tsp. ground cumin
2 tsp. ground coriander
1 tsp. garlic, minced
1/8 tsp. ground nutmeg
salt and pepper to taste
Directions
- Wash the spinach well and shake gently to remove the excess water. In a dry skillet, toast the ground cumin and coriander, taking care not to let the spices turn dark brown and burn.
- Add the damp spinach and garlic, and stir continuously to wilt the spinach leaves, Transfer to a serving bowl, stir in the nutmeg and season to taste with salt and freshly ground black pepper.
