Spiced Spinach

Ingredients

1 package fresh spinach
2 tsp. ground cumin
2 tsp. ground coriander
1 tsp. garlic, minced
1/8 tsp. ground nutmeg
salt and pepper to taste

Directions

  1. Wash the spinach well and shake gently to remove the excess water. In a dry skillet, toast the ground cumin and coriander, taking care not to let the spices turn dark brown and burn.
  2. Add the damp spinach and garlic, and stir continuously to wilt the spinach leaves, Transfer to a serving bowl, stir in the nutmeg and season to taste with salt and freshly ground black pepper.
