Phyllo With Spinach

This parve recipe works well as a side dish or as a vegetarian entrée.

Ingredients
1 medium onion, chopped
1 cup mushrooms, chopped
2 tbs olive oil
2 bunches fresh spinach
Phyllo dough (10-12 sheets)
2 tbl flour
Salt, to taste
3 eggs, beaten
1/4 cup plus 2 tbl vegetable oil
Directions
- Saute onions in 2 tablespoons oil until translucent, then add mushroom and continue sautéing.
- Wash, cut and dry thoroughly 2 bunches of fresh spinach. Wilt spinach by sautéing.
- Lay phyllo dough in an oiled 9x13 inch baking dish; gently brush each sheet with vegetable oil.
- In a bowl, mix spinach with a little flour and salt, then add mushrooms, onions and eggs. Mix thoroughly.
- Spread mixture onto the phyllo and cover with a second layer (10-12 sheets) of phyllo, brushed with oil between sheets. Add extra oil to the last 2 sheets to prevent them from separating.
- Cut into squares (any size you want) and bake at 375 degrees (F) until golden brown.
- Serve warm.
