Pumpkin Cake with Orange Glaze

We love all things pumpkin at JRT and this cake is no exception. The glaze makes the cake.

Ingredients
1 1/2 cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp salt
8 tbl margarine (non-dairy)
1 cup sugar
2 eggs
1 cup canned pumpkin puree
1 cup confectioners’ sugar, sifted
2 tbl orange juice
zest of 1 orange
Directions
- Combine the dry ingredients (flour, baking powder, baking soda, cinnamon, ginger and salt) in a bowl and set aside.
- Separately, beat together margarine and sugar. Add eggs, one at a time, and continue beating. Finally, add the pumpkin.
- Add the dry ingredients and mix well. Pour batter into an oiled and dusted 6-cup Bundt pan and bake for 30 minutes, or until a wooden toothpick comes out clean.
- While cake cools on a rack, prepare the orange glaze.
- Mix together confectioners’ sugar, orange juice and orange zest until smooth then drizzle over the cake.
