These doughnuts or fritters are a nice alternative to the Hanukkah sufganyot (or jelly doughnuts).

Ingredients
6 cups flour
2 pkgs. active dry yeast
3 cups warm water
2 tbs. sugar
1 tsp salt
2 tbs vegetable oil
oil for frying
Directions
- Combine yeast, 1 cup warm water and sugar and let stand 10 minutes.
- Mix salt, oil, 2 cups water and yeast mixture in a large bowl.
- Gradually add 6 cups of flour and mix well to make a smooth, sticky dough.
- Cover bowl and let rise in a warm place for an hour.
- In a deep saucepan, heat oil to 375 degrees (F) (use candy/deep fry thermometer).
- Make two-inch dough balls and poke a hole in the center with your finger. Make sure your hands are moist to keep dough from sticking.
- Fry in hot oil until golden brown on all sides. Remove and drain on paper towels to remove excess oil
- Sprinkle with confectioner’s sugar or serve with warm honey.
