Roast Chicken with Mustard Sauce

We called this one American but may not be. Anyway, it's really good!

Ingredients

1 Whole roasting chicken
1 tsp. garlic powder
1 tsp. onion powder
3 tbs. Dijon mustard
¼ cup soy sauce
¼ cup canola oil
¼ cup kosher cooking sherry
¼ cup rice vinegar

Directions

  1. Wash chicken and hold upright in roasting pan.
  2. Sprinkle with garlic and onion powder, adjusting amount to taste
  3. Rub mustard over chicken, on all sides
  4. Mix the soy sauce, canola oil, sherry and vinegar then pour over chicken
  5. Roast at 350 degrees (F), basting frequently, for about one hour

Nice flavor. This recipe was easy to make and had a nice flavor. Only change I made is that I used a whole cut-up chicken but I can't see where it makes any difference.

The mustard and soy sauce give this roast chicken an interesting taste. Not your typical roast chicken.
