Olives liven up this baked chicken recipe.

Ingredients
3/4 cup pitted green olives, halved
Whole cut-up chicken (3-4 lbs)
4 cloves garlic, halved lengthwise
1/2 cup flat-leaf parsley, chopped
2 tbsp. grated lemon zest
8 oz. cherry or grape tomatoes
Cracked black pepper
Sea salt
2 tbsp. olive oil
Directions
- Preheat oven to 400 degrees. If olives are very salty, soak them in cold water for 5 minutes. Drain.
- Place chicken in baking dish in single layer, skin side up, with a piece of garlic under each chicken piece.
- In a medium bowl combine olives, parsley, lemon zest, cherry tomatoes, pepper, salt and oil. Spoon evenly over chicken pieces.
- Bake 45-55 minutes uncovered until chicken is golden and cooked through.
- Place on serving plates and drizzle pan juices over chicken.
