Tangy Chick Pea Salad

This is a great appetizer/side dish and healthy too. I don't measure the ingredients, just eyeball and taste. The longer is marinates the better, I like to make this at least 1 day ahead of time.

Ingredients

2 cans chick peas drained
1/4 cup diced carrots
1/8 cup diced peppers, green and red
1 tomatoe
3 tbl. parsley
1/2 cup onion
1/4 cup lemon juice
1/2 cup olive oil
1/2 tsp. garlic powder
1 tsp. salt
1 tsp. fresh ground pepper
1/2 tsp. allspice

Directions

  1. Slice and dice carrots, peppers, tomatoes and onion very small. Mix 1/2 olive oil, 1/4 lemon juice, garlic, salt, fresh ground pepper and allspice to taste. Add vegetables to liquid and store in airtight container ( I like to use Ziplock bag with air pushed out) and refrigerate.
  2. Enjoy!!!!
