String Beans with Allspice and Garlic (Fassoulia)

Another great variation on braised string beans in tomato sauce. You'll enjoy it.

Ingredients

6 garlic cloves, minced
2 tbs. vegetable oil
3 lbs. string beans
2 cups water
1 tsp. ground allspice
1 tsp. Kosher salt
1/4 tsp. ground cinnamon
1/2 tsp. white pepper
1 can (6 oz.) tomato paste

Directions

  1. Trim the ends off the string beans.
  2. In a medium saucepan, sauté the garlic in the vegetable oil over medium heat for 2 minutes.
  3. Add the string beans, water and spices. Spoon out the tomato paste into the saucepan - don't stir it in (it will stick to the beans better).
  4. Bring to a boil then reduce heat and simmer, covered, for 30 minutes. The liquid should reduce and the beans will be nice and soft.
