Great parsley based salad makes a great accompaniment to any meal.

Ingredients
1/4 cup fine bulgur (cracked wheat)
2 bunches parsley
4 tomatoes
2 cucumbers
1 bunch mint
2 lemons
1 cup extra virgin olive oil
salt, to taste
Directions
- Place bulgur in a bowl and soak with cold water until it softens. Drain and set aside.
- Finely chop the parsley and mint and dice the tomatoes and cucumbers.
- Mix the vegetables and herbs together and mix together with the bulgur.
- Prepare a salad dressing by mixing the juice of the two lemons with the olive oil and add salt to taste.
- Drizzle dressing over salad and toss to coat well.
