Popular dish in Egypt for breakfast, Ful (pronounced "fool") Mudammas (or Medames) has an ancient history, and originally used a cooking method mentioned in the Talmud (burying fava beans in sealed pot of water over coals - see Wikipedia for additional details). This dish is also popular in Sudan, Syria and Israel.

Ingredients

1 can fava beans
1/2 green jalapeno pepper
2 colves garlic
1/4 tsp. salt
juice of two lemons

Directions

  1. Boil the beans on low for 15 minute.
  2. Chop the garlic and pepper fine then mix with the salt and lemon juice.
  3. Add to the fava beans and mix.
  4. Serve with olive oil and parsley on top.
