Matzah Fritters

Ingredients

Fritters:

6 matzahs
6 eggs, beaten
1/3 cup sugar
3 tbs. matzah meal
Oil for frying
Chopped nuts

Syrup:

2 cups sugar
2 cups water
Juice of 1/2 lemon

Directions

  1. Break matzahs into small pieces and soak in cold water. Drain well.
  2. Add eggs, sugar and matzah meal and blend to form a batter.
  3. Drop batter by tablespoonfuls into hot oil and deep fry until golden brown.
  4. Prepare the syrup: Boil sugar and water until syrup thickens (about 15 minutes). Add lemon juice.
  5. Drop fritters into syrup, remove and roll in finely chopped nuts.
