Also called Binuelo’s these are great for Passover or Hanukkah.

Ingredients
Fritters:
6 matzahs
6 eggs, beaten
1/3 cup sugar
3 tbs. matzah meal
Oil for frying
Chopped nuts
Syrup:
2 cups sugar
2 cups water
Juice of 1/2 lemon
Directions
- Break matzahs into small pieces and soak in cold water. Drain well.
- Add eggs, sugar and matzah meal and blend to form a batter.
- Drop batter by tablespoonfuls into hot oil and deep fry until golden brown.
- Prepare the syrup: Boil sugar and water until syrup thickens (about 15 minutes). Add lemon juice.
- Drop fritters into syrup, remove and roll in finely chopped nuts.
