Easy Apple Cake

Ingredients

1 cup sugar
2 cups apples, diced
1 egg, beaten
1/2 cups vegetable oil
1 1/2 cups flour
1 tsp. baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 tsp. vanilla

Directions

  1. Mix apples and sugar and let stand 10 minutes.
  2. Add oil, egg and mix.
  3. Combine and sift flour, cinnamon, baking soda and salt over apples. Add vanilla and stir.
  4. Pour into a greased 8"x 8" cake pan and bake 45 minutes at 350 degrees (F).
  5. Cake is done when inserted toothpick comes out clean.
