Nut cookies are popular in many Jewish communities during Passover because they don't use flour and are parve. This version comes from the Italian Jewish community.

Ingredients
4 yolks of extra large eggs
8 tablespoons granulated sugar
3 1/2 cups coarsely chopped walnuts Grated rind of 1 lemon (optional)
Directions
- Beat egg yolks with sugar until very thick and almost white.
- Mix chopped walnuts and lemon rind into egg yolk mixture.
- Place teaspoonfuls of batter onto an ungreased cookie sheet, leaving 2 inches between them, and bake for about 10 minutes at 325 degrees (F). Cookies should be firm when done.
