Walnut Cookies

Nut cookies are popular in many Jewish communities during Passover because they don't use flour and are parve. This version comes from the Italian Jewish community.

Ingredients

4 yolks of extra large eggs
8 tablespoons granulated sugar
3 1/2 cups coarsely chopped walnuts Grated rind of 1 lemon (optional)

Directions

  1. Beat egg yolks with sugar until very thick and almost white.
  2. Mix chopped walnuts and lemon rind into egg yolk mixture.
  3. Place teaspoonfuls of batter onto an ungreased cookie sheet, leaving 2 inches between them, and bake for about 10 minutes at 325 degrees (F). Cookies should be firm when done.
