Overnight Passover Cookies

Easy Passover cookies. Prep time does not include overnight freezing.

Ingredients

1 egg, beaten
1/3 cup sugar
3/4 cup oil
1 cup cake meal
2 tbl potato starch
cinnamon/sugar mixture

Directions

  1. Mix egg, sugar, oil, cake meal and potato starch in order.
  2. Mold mixture into two long strips, wrap each in wax paper and leave overnight in the freezer.
  3. Remove from freezer and cut each strip into 1/2" thick slices.
  4. Bake cookies on an ungreased cookie sheet for 10 minutes at 375 degrees (F).
  5. Sprinkle with cinnamon sugar mixture and enjoy!
