These pancakes make a great breakfast or sidedish during Passover.

Ingredients
1/2 cup matza meal
1/2 tsp. salt
1 tbl. sugar
3/4 cups water, cold
3 eggs
Directions
- Combine matza meal with salt and sugar
- Seperate eggs and beat yolks lightly. Set egg whites aside.
- Combine yolks with water and add matza meal mixture
- Let stand 1/2 hour
- Beat egg whites until stiff and fold into matza meal mixture
- Place tablespoon of mixture onto greased fying pan and brown on both sides.
- Enjoy!
