Cheese Noodle Pudding

This is a variation on my wife's noodle pudding. Our boys love noodle pudding and will even eat it for breakfast!

Ingredients

16 oz. cottage cheese
8 oz. ricotta cheese
8 oz. cream cheese
8 oz. wide egg noodles
4 oz. butter, melted
1/2 cup sugar
dash of salt
2 cups milk

For the Topping:
1 cup cornflakes
1 cup brown sugar
1/4 cup melted butter

Directions

  1. Prepare noodles according to package directions but remove from water before fully cooked (al dente)
  2. Mix the cheeses, butter, salt, sugar and milk together with the noodles and spread evenly in a baking dish.
  3. Cover with the topping and bake in a greased 13x9 in baking dish at 325 degrees for 30 minutes. Top should be browned.
