Ingredients

1 cup oil
1 1/4 cup sugar
3 eggs
2 tsp. orange zest
1/4 cup orange juice
4 cup flour
4 tbs. baking powder
1 cup nuts
1 tbs. vanilla

Directions

  1. Cream the oil and the sugar together for 8-10 minutes.
  2. Add the orange juice and one egg at time mixing constantly.
  3. Sift the flour and baking powder together and add to the creamed mixture.
  4. Add nuts and vanilla flavoring and mix thoroughly.
  5. Divide the mixture into four flat rectangular sections each about 1 inch high and 3 inches wide.
  6. Bake at 350 degrees (F) oven for 10 minutes.
  7. Remove from oven and slice each section into ¾ inch wide cookies.
  8. Return to oven and bake for an additional 10 minutes at a lower temperature of 300 degrees (F).
  9. Turn over the cookies and bake for a final 10 minutes.
