Sweet Potato Pie

This is not a dessert this is a delicious side dish. The sweet potato pie is great with brisket or turkey. This side dish maybe used for Passover, Rosh Hashana, even Sukkot!

Ingredients

2 Large Cans of Yams
2 Cans of Mandarin Oranges
1 Large Can of Crushed Pineapple
3 Tablespoons of Cinnamon (or more to taste)
2 Fresh Squeezed large oranges
1-2 packages of Kosher Marshmallows

Directions

  1. Open all the cans and mix all the ingredients together.
  2. Squeeze the 2 oranges and add the cinnamon.
  3. Use a Cuisinart or hand mixture.
  4. Pour the mixture into two round glass Pyrex pie containers.
  5. Bake for 40-60 minutes
  6. Take out of the oven
  7. Add the Marshmallows all around the top cover it. Place the glass containers under the broiler for 3-4 minutes until golden brown.
  8. WATCH SO THE MARSHMALLOWS DON"T BURN!
