Potato Latkas

These traditional Hanukkah potato pancakes are actually great anytime! This recipe is for a small batch but you can easily scale it up. We typically make about 150 for the holidays!

Ingredients

1 egg, beaten
2 tbl matza meal
4 potatoes, medium sized, peeled and shredded
1 onion, small, finely chopped
1/4 cup vegetable oil
Salt and pepper

Directions

  1. Combine the egg and matza meal and add salt and pepper to mix
  2. Make sure the shredded potatoes are dry -- they won't fry well if too wet
  3. Add the potatoes and onion into the egg mixture
  4. Spoon about 2 tablespoons of mixture for each latke. Roll into a ball and flatten out into a pancake.
  5. In a large skillet, fry the latka over medium heat until golden brown, turning once.
  6. Remove from skillet and drain on paper towel to remove excess oil.
  7. Makes about 2-3 dozen latkas, depending on how large or small you make them.
